Chef Ernet Preajean, a Lafayette native was hired by Prejeans Rest in 1993.From that day he began a upward trek toward the position he holds today as Prejean’s Executive Chef. Chef Ernest has worked under great chefs at Prejeans such as James Graham and Roy Angelle. Ernest has won over 70 medals from various culinary competitions locally and nationally. In 2004, Chef Ernest won Best of Show at Acadians Culinary Classic with his veal creation. He has travelled to different states and countries preparing his signature dishes for the masses. As Executive Chef Ernest manages, all aspects of one of Louisiana top Cajun Restaurant; from overseeing daily operations to creating new recipes.
